La mona (Easter sponge cake) is a great dessert throughout the Mediterranean tradition.
Each region claims the invention of mona of Easter. This cute sweet dough, decorated with an egg (or without it), is left wanting by all and refuses to disappear swallowed by the tide of industrial bakery.
