Pan De Calatrava. Calatrava Bread.


This dessert is typical of the Region of Murcia, is a dessert that was created to take advantage of everything. Born to use leftover bread or sponge cake the day before. The origin, I have not found it, but the recipe is as follows:
Ingredients: 6 eggs 1 liter milk 250 g sugar slices of bread (or sponge cake, I prefer) Peel of lemon and a cinnamon stick
Preparation: In a mold, add two tablespoons sugar and caramelize in the fire. It starts to boil the milk with lemon peel and cinnamon to flavor. Then remove the lemon peel and cinnamon and let cool. Beat eggs, add sugar, mix well incorporated into the milk. The mold is placed a layer of bread cut into small pieces (or pieces of sponge cake), ensuring that some pieces are pressed together with other and covered with batter. It gets a hot water bath and, once it is curdled, cool. Finally remove the mold and comes in a fountain.
Enjoy it.
